Lentil and Sweet Potato Soup
Ingredients
200g red lentils
1 medium sweet potato, diced
1 onion, finely chopped
2 garlic cloves, minced
1tsp ground cumin
1 litre vegetable stock
A handful of Spinach
Croutons (optional)
Instructions
- Gently fry the onion and garlic in a large pot until soft and fragrant.
- Stir in the diced sweet potato, ground cumin, red lentils and vegetable stock
- Simmer for 20 mins until tender
- Blend with a stick blender until smooth
- Stir in the spinach and top with croutons and fresh herbs
Serve with crusty buttered bread for a lovely cosy meal.
