Peanut Butter, Banana Oat Biscuits

Peanut Butter, Banana and Choc chip, oat Cookies

I recently made a batch of these lovely biscuits. They are simple, quick to make, healthy and yummy. Perfect to pack a few on your walk with a flask of tea!

Made with four simple ingredients

2 Large bananas, mashed.

1/2 cup peanut butter

1 Tbsp of Coconut sugar or Maple syrup (optional)

2 cups oats

pinch of sea salt

1/4 cup Optional Chocolate Chips ( I chopped mine from a bar of dark chocolate but you can buy ready made chips)

Method

Pre heat oven to 180

Peel and mash bananas in a mixing bowl, add all the other ingredients and mix well until fully combined.

Cover a baking tray with baking parchment and drop 20 tbsp sized blobs on the sheet, squash with a fork to flatten slightly

Bake for 8-10mins until brown

cool on a wire rack, they will firm as they cool

Optional- drizzle with melted chocolate.
